
As most of y’all already know, my teen daughter and I have Lyme disease, co-infections, and autoimmune disorders. Over the last few years we have been told by our docs to eliminate foods from our diet. No dairy, sugar, gluten, soy, blah, blah, blah…. Everytime a doctor suggests another food to eliminate, I always think maybe we should just eat a bowl of ice for dinner.. Or of JP Sears’ video of cucumber pizza. We are pretty good at behaving (mostly) with our foods. Sometimes we have found that we just can’t go completely sugar free, so instead we use honey or pure maple syrup. Or, sometimes we will use 70% dark chocolate chips instead unsweetened pure cocoa. There are sugar free, dairy free chocolate chips, but they are too expensive for us cheepos! Eating gluten free and soy free is really pretty easy, so we don’t typically struggle with those.
It’s taken us some time to find, or invent recipes that are not just edible, but actually good. We get tired of hearing the phrase, “it tastes just like…..” That is almost always a lie and is usually bullshit! Never trust a recipe that uses that phrase. Haha! So, we have developed and/or found recipes for a healthier life that don’t suck. We will share them with you here. Hopefully you will like them as much as we do.
